The Cooktek MBW1800G Induction Unit: Buying

Buying a Cooktek MBW1800G Induction Unit

(For general information about buying equipment through this site, please read this page; for general information about induction itself and its pros and cons, browse this entire site, perhaps starting with our page on how induction works.)

About the MBW1800G Induction Unit

General Description

This wok unit is a part of Cooktek's "Apogee" line, a powerful yet reasonably priced answer for all the needs of professional commercial cooking operations, as further described below. In this case, the sub-line is the Apogee buffet service units, which include warmer/light-cooking plates and true woks (meaning they have true wok bowls), of which this is one.

Unlike most of Cooktek's products, this unit runs on a standard 120-volt supply (not 240 volts), allowing its use where only ordinary mains service is available.

Features

This is literally an "industrial-strength" unit, designed for commercial kitchens. (So think how well it would do in even the most demanding residential application.) Naturally, it has automatic pan detection (elements will not power unless there is a suitable cooking vessel in place on them); but beyond the basics, the unit's distinctive Cooktek Apogee-line features include:

generic Apogee controls

Fingertip Control: With just the slide of a finger, your specifications become customized, right down to the built-in cooking timer.

Precise Temperature Control: With Cooktek's Apogee line, you can not only control unit power (as you can with all induction equipment--it's the equivalent of turning the flame up or down), you can also set the unit to cook at a particular temperature. If your recipe calls for a specific temperature, with Cooktek that's no problem. With just the slide of a finger, you can set a specific holding temperature anywhere between 85° and 500°. With fully 100 different temperature settings to choose from, even the most delicate dishes become simple to cook.

LCD Display: The readout instantly gives you all the information you need--large, clear, and easy-to-read so you can concentrate on the cooking, not the cooking equipment.

Auto-Monitoring and Diagnostics: Inside each Cooktek induction cooktop is a built-in SmarTemp microprocessor that monitors key internal components 120 times a second. It protects against power surges, and checks for problems associated with overheating, blocked airflow, or almost anything else you can imagine. If a problem is detected, the unit immediately shuts itself off--so no damage can occur--and shows an event-specific error code in the unit's LED display, so you can easily diagnose and remediate most problems immediately.

Heavy-Duty Ceramic-Glass Smoothtop: Cooktek's glass smoothtops can withstand temperatures up to 1000°F. Their high physical shock values allow these cooktops to withstand everyday use in even the busiest of commercial kitchens.

Commercial-Kitchen-Proof Electronics: All Cooktek electronic components are specified with the commercial kitchen environment in mind. They are intended to withstand grease, flour, other food particles, and extremely high ambient temperatures.

Built-In Stainless-Steel Edge: The ceramic glass on Cooktek cooktops is designed to withstand anything a commercial kitchen can offer. And, although it has extremely high shock values, they've built in yet another safeguard: every Cooktek cooktop has a reinforced stainless-steel edge that serves as extra protection around the edge of the glass to avoid splitting, cracking, or other such safety issues.

Cooktek Warrantee: The CookTek brand on the faceplate ensures you quality product and customer service, backed up by a 1-year parts and labor warranty.

Integral Cooling Fan: Cooktek units each have an integral fan, to keep their internal electronics reliably cool.

About Actual Buying

To better understand the details of purchase and delivery, please read this page of information.

Placing Your Order

To order the unit, click on the button below; that will take you to the unit's "Buy" page on Select Appliance, the online retailer handling the purchase. When you arrive at that page, simply click on the ADD TO CART button there, which will look like this: dummy sample Select add-to-cart button (this sample is just that, a non-functional sample of what you will find after you click the button below). Clicking that ADD TO CART will place the unit in your Shopping Cart at Select Appliance.

Remember: You have not actually purchased the unit till you proceed from the Cart to Checkout at the Select Appliance site!

The item-buy page at Select Appliance will open in a new browser window. If you want to shop here for more products before checking out, you can just close that browser window, which will leave this page visible again. Items placed in your Cart should remain there for quite a while (days, not hours) till you're ready to complete your purchases.

Induction Cooking Equipment Available Through This Site

The following induction-cooking equipment (here listed alphabetically by maker) is available for purchase direct through this site. We ask that if you have not already read our explanation of why we hope that you will choose to make your purchases here you please take a look at it now.

Note! We are always expanding our offering of equipment at retail: in particular, the list of products we offer in the U.K. will be expanding greatly in the very near future. Right now, we believe we have virtually all residential equipment available at retail in North America at the best internet prices to be found, and we also have a good selection of the available commercial-grade equipment (which selection will be growing). If you're looking for a particular product and it isn't on our lists--and you're not in an urgent rush--please check back here from time to time (or email us with an inquiry).

An availability restraint imposed by a very few brands, is geographic: a given retailer can only deliver to within a fairly small specified territory. We think that such a business model is wildly out of touch with twenty-first century ways of doing business, especially on the internet, but we do not and cannot control those companies' policies. You will thus find that for a product few lines--Viking, Wolf--our current offerings are geographically limited. We are actively seeking other retail partners with other territorial coverage, so that we can approach full North American coverage, but that may take a while.

Listed below, alphabetically by maker, is what we already offer. As a general guide, units described as "hob" are available in the U.K., while those described as 'cooktop" (or, for countertops, "unit") have North American availability.

(Besides actual induction-cooking equipment, we also facilitate your direct purchase of cookbooks--whether of any cookbook or from our lists of specially selected cookbooks; we are also in the midst of adding cookware listings--we already have cast iron, and should soon have clad.)
