About the MW1800 Induction Unit
General Description
This countertop ("free-standing") unit is a part of Cooktek's "Heritage" line, a powerful yet reasonably priced answer for all the needs of professional commercial cooking operations,
as further described below. This unit is one of their Heritage true woks (meaning they have true wok bowls); the bowl of this unit is of heavy-duty plastic.
Unlike most of Cooktek's products, this unit runs on a standard 120-volt supply (not 240 volts), allowing its use where only ordinary mains service is available.
FeaturesThis is literally an "industrial-strength" unit, designed for commercial kitchens. (So think how well it would do in even the most demanding residential application.) Naturally, it
has automatic pan detection (elements will not power unless there is a suitable cooking vessel in place on them); but beyond the basics, the unit's distinctive Cooktek features

TEMPERATURE CONTROL
With Cooktek, you can not only control unit power (as you can with all induction equipment--it's the equivalent of turning the flame up or down), you can also set the
unit to cook at a particular temperature. If your recipe calls for a specific temperature, with Cooktek that's no problem. With the push of just one button,
you can turn the knob from left to right to set a specific holding temperature anywhere between 85° and 450°. With fully 27 different temperature settings to choose from,
even the most delicate dishes become simple to cook.

LED DISPLAY
All Cooktek induction cooktops have a conveniently located LED display--on their freestanding cooktops, it's on the front panel, while on their build-in cooktops, it's right under
the glass of the smoothtop surface, for easy viewing.

USER-FRIENDLY CONTROL KNOB
Just on sheer looks, many people like a "neat" push-button panel: but, invariably, when working cooks compare cooking and controlling heat with a knob against pushing buttons, they
overwhelmingly prefer the knob. And form follows function, which is why Cooktek uses rotary knobs for control. Cooktek's controls feature 20 power-cook settings and 27 precise
temperature settings.

AUTO-MONITORING AND DIAGNOSTICS
Inside each Cooktek induction cooktop is a built-in SmarTemp™ microprocessor that monitors key internal components 120 times a second. It
protects against power surges, and checks for problems associated with overheating, blocked airflow, or almost anything else you can imagine. If a problem is detected, the
unit immediately shuts itself off--so no damage can occur--and shows an event-specific error code in the unit's LED display, so you can easily diagnose and remediate most problems
immediately.

HEAVY-DUTY CERAMIC GLASS SMOOTHTOP
Cooktek's glass smoothtops can withstand temperatures up to 1000°F. Their high physical shock values allow these cooktops to withstand everyday use in even the busiest
of commercial kitchens.

COMMERCIAL-KITCHEN-PROOF ELECTRONICS
All Cooktek electronic components are specified with the commercial kitchen environment in mind. They are intended to withstand grease, flour, other food particles, and extremely
high ambient temperatures.

BUILT-IN STAINLESS-STEEL EDGE
The ceramic glass on Cooktek cooktops is designed to withstand anything a commercial kitchen can offer. And, although it has extremely high shock values, they've built in yet
another safeguard: every Cooktek cooktop has a reinforced stainless-steel edge that serves as extra protection around the edge of the glass to avoid splitting, cracking, or other
such safety issues.
