Induction Cooking:
Cooktek Induction Hobs

Cooktek

General Cooktek Information

Cooktek makes single- and dual-element units designed for commercial kitchens (though there's no reason those units can't be assembled into any custom home countertop). For both "regular elements" and their line of induction woks, they have both modular build-in and free-standing "tabletop" units--but be careful when considering free-standing units to be sure that the electrical outlets available where you're thinking of placing them have sufficient capacity to power the unit you're considering (built-in units usually have access to sufficiently high-amperage undercounter power).

You can purchase any Cooktek unit through this site, just by clicking on the wanted unit or units as listed in the Table farther below on this page. (We believe our prices are as low as can be found, especially when shipping costs--which are free here--are factored in.)

As always in these listings, we give these standard general--

Important notes on these data:

  1. We have spent a lot of time hunting these data--often in several places for each individual unit--but we cannot and do not guarantee any datum to be correct (indeed, we often found conflicting data at different sources). Caveat emptor!

  2. For those units we offer for sale, the prices shown are never over an hour old. For other items, the prices shown are the lowest we found with moderate but not fanatic searching; moreover, they are not updated very often and are only intended as a rough guide to comparative unit values in cost/power terms.

  3. Most "Features" are not terribly important, and are nearly standard among roughly similar units, regardless of brand name. If some "feature"--shown or omitted--is especially important to you, check on it, because we did not take great pains over the "Features" data.

  4. Dimensions given here are, as the makers themselves warn, only to be used as guidelines in planning--never do anything till you have your actual unit to hand.

  5. Our criterion for including units here--as opposed to in the "residential use" section--is the maker's labelling of the product on its web site or in its advertising; but be aware that makers use a lot of what lawyers call "commercial puffery", and the acid test is the exact wording of the warranty. If any unit's warranty excludes service in commercial settings, well, that speaks for itself. Regrettably, warranty forms are rarely available for inspection on-line for commercial units, so yet again: Caveat emptor!

Cooktek has a plethora of units available. You can see through the morass a little better if you keep these few things in mind:

Almost all Cooktek lines come at four power levels: 1.8 kW (115-volt service), 2.5 kW, 3.0 kW, amd 3.5 kW (all 240-volt service). All Cooktek units within a given line will be the same size and shape; they will differ only in cooking power, current draw, and price.

Cooktek has two broad classes of line: build-in and freestanding countertop. Within each type they have single-element units and woks. But, just to complicate the picture, each line also has a pair of dual-element units; moreover, the pairings include both side-by-side and front-to-back configurations.

The basic ("heritage") Cooktek line has an upscale "mirror" line, the "Apogee" series, which is basically the same units with a fancier control-and-display front panel.

And, to round out the proliferation, the Heritage-series woks can be had with either a high-strength plastic bowl or with a more expensive high-strength ceramic-glass bowl. (Apogee-line woks have only ceramic-glass bowls)

All that said, here's the roll call. We now use as our top-level separation the "heritage" product line versus the "Apogee" product line. Within each line, the highest division is between build-in units and countertop units; within those types, we divided by standard types (which have the usual flat cooking surface) and wok types (which have special wok-bowl holders); within the standard types, we divided by single-element units versus dual-element units, while within the wok units we divided by high-impact-plastic bowl versus ceramic-glass bowl.

Because Cooktek makes almost four dozen differing units, it may help if, before we list each, we "map out" the classifications just described. It looks like this:

Cooktek Induction-Unit Data

To keep from needlessly complicating the presentation, we show below details only for representative units from each of the product lines (Heritage, Apogee) and product series within those lines. The others of each series differ from the unit shown only in power. Excepting the Buffet Server stations, each product series has four powers: 1.8 kW, 2.5 kW, 3.0 kW, and 3.5 kW (the dual-element products each have two identical elements of equal power). Within each 4-power-level series, all units are for 240-volt service except the 1.8-kW units, which all run off standard 120-volt service, making them useful where dedicated appliance-voltage lines are not available.

As the Table above shows, there are 13 product series. We present them here segregated by product line (Heritage, Apogee). As noted above, the newer Apogee line differs from the established Heritage line chiefly in its control/display features: the Heritage line uses knobs for control, while the Apogee line uses finger-touch "touchpad" sliders for control, and has somewhat sexier readouts. In actual heating performance, the lines ought to be essentially similar.

To further reduce duplication, we do not show separate boxes for the wok units that are differentiated only by the material of which the bowl is made. As noted above and below, such units can be had with either heavy-duty black-plastic bowls or with black ceramic-glass bowls (the Apogee-line woks, however, come only in glass).

Note that all dual-element units can be had configured as either side-by-side (as shown below) or configured front-to-back for when lineal counter space is crucial.

Again, use the Table above to understand (and to order from) the lines and series, and the listings below to see representative samples in detail. Clicking on any listing in the Table above will take you to a full-details page on that exact unit, from which page you can buy the unit if you like (there are no "buy" links below, because there we are only showing representative units, not the whole Cooktek line).
