About "Color" (Enamelled-Porcelain) Cast-Iron Cookware (Or jump to the full list of available Lodge cookware farther down the page.)        About Lodge "Color": It's scarcely any wonder that the respected Cook's Illustrated list of absolute essentials of kitchen cookware included a 7-quart enamelled Dutch oven: the number and variety of dishes that a Dutch oven is suited for encompass a good fraction of cooking. Indeed, many cooks (including us) couldn't get along without more than one, of varying sizes. And--though it is scarcely essential to function--who can resist the luscious colors these things come in? Lodge, the foremost maker of cast-iron cookware for over a century now (and, as countless customer reviews on various online bulletin boards show, immensely popular with cooks of all skill levels) offers enamelware items in two lines, "EnamelWare" and the new "Color" line, each literally hand-crafted, coated with multiple layers of first-water enamel imported from France. The undersides of their Dutch oven lids have small projecting tips that, by condensing and dripping down moisture that may evaporate during cooking, makes a clever "self-basting" cooker, in which foods are far less likely to be dried out by the cooking. And their distinctive design, notably the generous handles, makes maneuvering this heavyweight cookware as easy as it gets. This is cookware is for the ages: take even modest care of it and it will pass down to your great-grand-children--giving you, them, and everyone in between some wonderful cooking experiences. For lids, "self-basting" refers to the Lodge feature of specially designed "spike" points on the interior of the lid; those accumulate boiled-off liquids from the cooking food and drip them back down onto that food, hence the term "self-basting".
